Elk meat has always been a favorite of mine, and after my last hunt, I still have some in the freezer ready to go. I love trying out new recipes, and this is one I keep coming back to. It’s especially great to eat in a bread bowl with all the toppings added. Make a large pot for the whole week or the whole family!
It’s hard to beat fried wild turkey, so I wasn’t going to steer away from that, but I was looking for a slightly different way to serve it this year compared to how I have in the past. Adding some fresh greens and vegetables to the fried turkey and morels, along with my favorite salad dressing, was the way to go! The Lemon Pepper seasoning in the turkey breading and the salty/crunchiness of the fried morels complimented each other perfectly in the salad.
Seeing a bald eagle soaring high above is a magical experience for most Americans. I never take seeing an eagle for granted because generations of Missourians who came before us rarely had a chance to see an eagle in the wild. As sightings of our nation’s symbol of freedom continue to increase, we cannot forget the dire straights these magnificent creatures once faced.
